What I Cooked Today Series (Special Post)- 2013 Mid Autumn Festival

INTRODUCTION

I have not forgotten about this series –  “What I Cooked Today Series”! I have discontinued for a while because I am a vegetarian and the dishes were usually cooked by my mother in law who is visiting me. Therefore, I can’t claim the credit of the dishes cooked if I posted it.

Well this series will be starting soon in one two weeks time after end of my vegetarian diet. This year, I have calculated wrongly about the starting date of my diet, therefore, I am having slightly more than 2 months of vegetarian diet and it was pointed out by my neighbour when I keep on rejecting her meat dishes. She asked curiously why the diet is so long this year, she said it cannot be ! I asked my wife to recalculate again and yes, we are wrong as both of us are not that concern about anniversary dates.

Yesterday is the Mid Autumn Festival, one of the very big festivals for the Chinese worldwide. Even People’s Republic of China’s government have declared this day as a holiday in recent years. Usually, in big festivals, family gathering and get together is very important.

I only confirmed to invite my nephew’s family for dinner yesterday morning and I told them that I would only cooked what I have at home. As they are my very close relatives, I need not really concerned about what I should cooked as he have been staying with me for the past few years. I did not have the time to plan for the meal as I have to take care of the kids and I have to rush out my report for Eight Treasure Porridge.

I only started cooking at 4.00 pm in the afternoon. I looked at the fridge, I have some tofu, one pumpkin, one luffa, some chicken fillets, some asparaguses, minced meats, chicken thighs, drumsticks and fish fillets.

What influenced my dish menu last night was what I perceived what my family members like to have. I know anything soft and silky will be welcomed by them, so tofu and pumpkins would be good choices.

While the family always have bitter gourd with minced meat, but luffa with minced meat is something new to them. In addition, my kids loved luffa so luffa with minced meat was in the menu.

Preparing these two dishes had resulted some mesh pumpkins, minced meat and tofu left, therefore, I have decided to turn these 3 ingredients into  a dish.


PORK STUFFED LUFFA (丝瓜酿肉碎)

This is a dish adapted from pork stuffed bitter gourd (苦瓜酿肉碎). The luffa was first de-skinned, and cut into 2 cm chunks. Make a hole in the centre and set aside. Minced pork were marinated for about 10 minutes with sesame oil, corn flour, light soya sauce, flavour enhancers, sugar, pepper, chopped coriander leaves and chopped winter vegetables. Stuff the minced pork into the hole of the luffa chunks, placed it in a serving plate nicely and put a goof berry on top of minced meat for garnishing. Before steaming, put some water in the plate of the meat stuffed luffa. (A bit of water is important as it will speed up the process of cooking the luffa. The luffa will be “water bathed” causing it easier to get cooked). Steamed for about 20 minutes or until your luffa is soft.  More juices will be secreted out and these gravy was very tasty as it was essentially a meat and vegetable broth.  You can put some corn starch to thicken this juices if desirable.

TOFUS SAIL IN PUMPKIN SEA (豆腐金瓜海)

I have to admit that I do not know how to name this dish. Since it looks like a seas of mashed pumpkins, I  named this as “tofu sail pumpkin seas”. Firstly, I cut opened a pumpkin, de-seeded and steamed the pumpkin until the pumpkin was soft. I then scratched out the pumpkin flesh, put some sesame oils, salt, mushroom concentrate, mixed well and let the mashed pumpkin to cool.

Two packets of tofu’s were cut into 8 pieces and arrange in a serving plate. I used a teaspoon to make a hole on the tofu, put some mashed pumpkins to cover the hole. Use the remaining pumpkin to put beside the tofu and steamed for about 10 minutes. Surprisingly, the tofu and pumpkins really blends well.

MINCED PORK FRIED WITH MASHED PUMPKINS AND TOFUS (山寨蟹粉豆腐)

From the above two dishes, I have some mashed pumpkin left , some tofu left (from making a hole in the tofu cubes), some minced meat left (as I have prepared one package of minced meat for the luffa dish, therefore, I still have about half of the minced meat left). With these 3 ingredients, I have decided to mash the tofu and fried these 3 ingredients together.

I first stir fried some spring onion (white part) in a frying pan of hot oil until aromatic, followed by the minced meat and once the meat was 50% cooked, add the mesh pumpkin and mesh tofu. Stir fried for another 2-3 minutes, add white pepper, sugar, light soya sauce and salt and it become a rather presentable dish..like the famous Shanghai dish, “Tofu With Hairy Crab Roe”. Therefore I have named this dish in Mandarin the “Fake Tofu With Hairy Crab Roe”.

The dish was very tasty and smooth, it is well liked by the kids because of the aromatic spring onions.  I have placed the cooked dish in the empty shell of the pumpkin for serving.

BLANCHED ASPARAGUS WITH CHICKEN FILLETS (芦笋鸡柳)

This is really an easy dish.

Asparagus were de-skinned (depends on whether it is too mature or not) and cut into same length. Chicken fillet were first cut into the desired sizes, marinated with sesame oil, pepper and light soya sauce for about 10 minutes,

Have a pot of boiling hot water, drizzle a few drops of cooking oil and pinches of salt. Get ready a serving plate and put some oyster sauce on the plate.  Blanched the asparagus in the hot boiling water for 3 minutes and dip in icy cold cooked water.

Place these asparagus neatly in the serving plate on top of the oyster sauce. Coated the chicken fillet with some corn flours and blanched the chicken fillets in the hot boiling water for about 5 minutes. Scoop out and placed on top of the blanched asparagus. Sprinkled some fried shallots on top of the chicken and the dish was done.

This was definitely an easy and healthier dish as it involved no frying like the traditional method. Though I did not taste the asparagus but I can tell you that it was sweet as all the juices were being sealed inside the asparagus via blanching method of cooking.

CENTURY EGGS WITH PICKLED GINGER (皮蛋酸姜)

This dish was usually treated an appetizer in Chinese full course dinners and did not really need any preparation. As I have quite a lot of pickled ginger left from my demonstration in Guaishushu’s Page, therefore, I have decided to prepare this dish as an appetizer. You may want to learn about how to prepare the pickled gingers HERE.


POMELO (柚子/文旦)

When I was young, we did not celebrate Moon Cake Festivals with pomelo.

However, in recent years, it seemed that it is very common that pomelo became one of the festival fruit  during the  Moon Cake Festivals. I checked the internet, pomelo have the syllables as “have kids” (有子)in Mandarin, therefore, having pomelo means that it will bring you luck in conceiving a kid. Well, definitely not for me.

It is my usual way to de-skin my pomelo like what is in the picture to make it easier for my kids to eat. Therefore, all my kids loves to eat pomelo as they do not need to peel the internal white membranes separating the lobes in the fruit. They have been pampered, Unlike me, I never like to eat pomelo when I was young because of the difficulty to peel of the internal white membranes.


GREEN DATES (甜枣)

This is nothing to do with this festival. I just spotted in the supermarket a few days ago and I really love these green dates. I always called it mini apples. In my humble opinion, it taste like apples and is a one bite size. I am able to finish one box within a day. I don’t know but I do believe it is a very healthy snack, much healthy than any carbohydrates and sugar loaded snacks. Yesterday, it was served together with pomelo after dinner.


MOONCAKES (月饼)

I have a few boxes of moon cakes and I have decided to  serve a durian moon cake that my nephew gave me from the international “Three” Seasons Hotel.  However, I am rather disappointed with the moon cakes. Put in bluntly, it is just pure durian flesh wrapped in snow skin. When you eat the moon cakes, it is very soft and just like when one is eating fresh durian (though it don’t taste that fresh any more after so many days).

It was definitely not cheap and my nephew told me even after discount, one small moon cake cost SGD 12. I honestly believed that should I received the moon cake earlier, I will be able to replicate the moon cake  .. and how much is one durian is this season? May be 3 durians for SGD 10?  Well the one below is equally disappointing as they have incorporate orange flavour in the lotus seeds fillings.

Lastly, I hoped that you like my cooking adventures today and unlike previous festivals, I have cooked something very simple. In other festivals, majority were meat dishes and I managed to locate an old picture in my Facebook to share with you. This was taken by one of my nieces in 2012 to celebrate Chap Goh Me (元宵)during Chinese New Year.

Auspicious Day With Auspicious Porridge–Eight Treasure Porridge (八宝粥)

It is such an auspicious day that I am writing this post. I swear it is not pre-planned. Today is Mid Autumn Festival aka Moon Cake Festival, it is a festival that is celebrated by all Chinese worldwide. As request by one of the Google communities, I have written a brief write up on Mid Autumn Festivals HERE which you may want to have some casual reading.

The cuisine that I am going to post today is a vegetarian dish called 8 treasure porridge (八宝粥). There are so many versions of this one pot dish in the internet but the recipe that I am going to share is from my kind neighbour. She liked to cook this porridge and after I tried it for the very first time, immediately I fell in love with it. Since then, I had liked to cook this dish in important festivals such as Chinese New Year Day where the whole family were supposed to be on vegetarian diet for one day.

I have cooked this yesterday not because of the festival, but because I craved for the porridge since I am still on my vegetarian diet. I gave two boxes of the porridge to my daughter’s schoolmates mother, she immediately asked for the recipe when she reached home. She commented that the taste of the porridge was totally different from what she had tasted in the vegetarian stalls.

I did not know where my neighbour get the recipe but I found that there are certain ingredients that we used were not found in other 8 treasure porridges sold by the vegetarian stores. Both the ingredients were mock meat acceptable to all vegetarians and without these two ingredients, the taste will definitely be different.

As this was our dinner last night, I did not have much chances to take pictures and the poor lighting make the picture a bit disappointed. But trust me, this is a very different 8 treasure porridge and it is definitely good for casual dining or a presentable dish in important Buddhist religious occasions.

WHAT IS REQUIRED

Though the name is 8 treasure porridge, however, we tend to have more than 8 ingredients and I do not think all my ingredients are in the picture.  I should have used 11-12 ingredients here. Most of the ingredients are nuts and a few ingredients and some mock meat.

  • 1 cup of uncooked rice – not in picture (白米)

  • 1 cup of jujube (红枣)

  • 1 cup of peanuts (花生)- soaked

  • 1 cup of cashew nuts (腰豆)

  • 1 cup of lotus seeds (莲子)- soaked

  • 1 cup of gingko nuts  (白果)- soaked

  • 1 cup of red carrots (cut into cubes) (红萝卜)

  • 1 cup of dried mushrooms (soaked and cut into cubes) – not in picture (冬菇)

  • 1 cup of mock duck (must have) – (素鸭)

  • 1 small packet of “fat Choy” or “black moss” (发菜)

  • 1 packet of about 2 sheets of mock goose (素鹅)(must have)

  • 6-8 cups of plain water (if not adequate, you can add in water later)

Please do not ask me why they were called mock duck or mock goose, frankly, I do not know. While the shape is difference, the taste is nothing like duck of goose. Both are made of wheat gluten, oil, soya sauce, sugar, salt and packed with proteins. They do have their distinct flavour but I can’t describe exactly what is the flavour. They can generally found in Chinese grocery stores that sell vegetarian supplies. These two items are the two most important ingredients in this porridge and without it, the taste will be different.

 IMG_6561 “Fat Choy” or “ Black Moss”

This a type of moss now commercially cultivated in the Gobi dessert and Chinese Government do place a restriction in harvesting the moss. The meaning of having these mosses signifies prosperous since the syllables in Chinese name is the same of both “Fat Choy” and “Black Moss”. I hereby quote what Wikipedia had explained about this moss.

“Fat Choy (Nostoc flagelliforme), also known as faat Choy, fa cai, black moss, hair moss or hair weed is a terrestrial cyanobacterium (a type of photosyntheticbacteria) that is used as a vegetable in Chinese cuisine. When dried, the product has the appearance of black hair. For that reason, its name in Chinese means “hair vegetable.” When soaked, this vegetable has a very soft texture which is like very fine vermicelli.” (Source:  http://en.wikipedia.org/wiki/Fat_choy)

STEPS OF PREPARATION

Preparing all other ingredients

  • Clean all ingredients (except mock duck and mock goose) and you may want to soak the peanuts and lotus seeds (if you buy the dry type). Cut into almost the same size as the peanuts and set aside for the later use.

  • In a frying pan, have some cooking oil under high heat, fry the mock goose until crispy. When cooled, cut into thumb size pieces and set aside for the later use. (Note: While it is good to have minimum oil in the cooking, however, without performing this step, the fragrance will not be there. However, you can try using “air fryer” but I am unsure whether the taste will be the same.)

  • Depending on your preference, you can use the same oil to stir fry the mock duck, gingko, lotus seeds, mushrooms, carrots etc. for a few minutes such that the mock goose and mushroom aromas blends with the other ingredients. Set aside for later use. This illustration bypassed this step to minimize the usage of cooking oil in the porridge and the taste will not be compromised much.

  • Clean your rice and place in the rice cooker. Add in all other ingredients except “fat Choy”. Select porridge function for cooking the porridge.

  • Just a few minutes before the porridge function was done, add in fat Choy and seasonings. Suggested seasonings are light soya sauce, salt, sugar or other flavour enhancers. Note that some of the ingredients already have some seasonings, please take some porridge out for tasting before you put the condiments.

Note that you can also use pressure cooker but remember to select the porridge function if it have. Alternatively, I have ever cooked the porridge over the stove and in this way it is easier for you to monitor the desire texture of your porridge though the cooking time may be longer. As long as all ingredients are soft, the porridge is considered as done.

  • Best served hot with “you tiao” – a type of Chinese plain dough fritters or additional crispy “mock goose”. Both these are optional.

Vegetarian Pizza Is Just As Tasty ! Simple And Basic Vegetarian Pizza Preparation

I loved pizza. Pizza is one of the most common food that I ordered when I have meals in Western Restaurants. I love pizza for its dough and cheese. It is a comfort food that I can easily eat an 6 inches diameter pizza. However. I have never really ever prepare pizza since I start my baking 15 years ago. I am thinking that since I have made bread, cakes, muffins cupcakes etc., why don’t I make my own pizza?

In my Facebook group : Food Bloggers and Foodies United, one of the bloggers Ms Ainy Wajahat from Pakistan have posted some pizza recipes and I promised here that I will bake some pizza. Therefore, I have based on her recipes to make the dough. For the toppings, since I am still on the vegetarian diet, I have used mostly vegetables found in my fridge.

Initially, I intended to make my own pasta sauce. Somehow, as I am too tired that afternoon, I rushed to a provision store nearby and bought a can of ready made pasta sauce. You can read the making of Pasta Sauce from fresh tomatoes HERE.

Instead of preparing it  in the traditional round shape pizza, I have opted to make a rectangular shape pizza which is easier for me to bake and cut for later serving. I made the dough in the morning and intended to have the pizza for lunch, somehow, the family members decided to go out for lunch, therefore, I froze my dough in the fridge and only made the pizza during dinner time.

Making pizza is really simple and at times, I just wonder why shall I pay so much for pizzas that were sold in the eating outlets.

WHAT IS REQUIRED

Dough – Recipe adapted from Ainy Cooks

  • 500 grams plain flour

  • 30 grams butter (at room temperature) or olive oil or ghee or normal cooking oil

  • 300 ml of water

  • 1 egg

  • 1 teaspoon of salt

  • 1 tablespoon of instant yeast

Toppings

  • Some Enoki mushrooms (cut into half)

  • Some fresh mutton mushrooms (shredded)

  • Some fresh sweet corns

  • Some green capsicums (shredded)

  • Some sausages (for my kids portion)

  • 1 tin of pasta sauce about –about 500 grams

  • Abundant of mozzarella cheeses or cheddar cheeses or goat cheese or other cheeses of your choice. 

The ingredients here are for reference only. You can add a whole range of your preferred vegetable such as tomatoes, pineapples, preserved olives, celeries and etc..

STEPS OF PREPARATION

  • In a big mixing bowl, place all materials except butter/ghee/cooking oil/olive oil and use a dough hook to mix until well mix. Add in butter and continue to beat until the dough is smooth. Let it proof for at least 1 hour or until the dough size double. Use a cling wrap or a wet towel to cover the top.

  • Lightly grease a baking tin and pre-heat your oven to 200 degree Celsius.

  • Punch your dough in the centre to let the air escape. Lightly knead and use a roller pin to roll into  a flat piece resembling the shape of the baking tin. It will be about 0.5-1 cm thick for the dough to cover all the tin area. Make it as even as possible.

  • Use a fork to lightly make some holes on top of the dough. As this is a big piece of pizza, this is to let the air to have some holes to escape.

  • Spread some pasta sauce on top of the dough

  • Fill the top with your choice of vegetables  and meats, if desired. sprinkle some Italian herbs mix such as basil, oregano etc..

  • Sprinkle sparingly with mozzarella cheese or other cheeses with your choice.

I have make half of the pizza as vegetarian and another half into ham and sausage pizzas for my kids.

  • Bake your pizza in the oven for 15-20 minutes until the bases are cooked and cheeses have melt.

  • Cur into your desired size and shape and best serve hot with your choice of additional sauces such as Tabasco sauces, mayonnaise or just plain.

CONCLUSION

This was one of my very first basic vegetarian pizza that I have made  with great success. The post was very short because it deals with basic pizza preparation. More variations will come and Guaishushu will tailor the taste to the very Asian taste such as curry and etc.. However, that shall have to wait after Guaishushu finishes his vegetarian diet.

How I Wish This World Is As Colourful As A Rainbow–Cranberries Raisins Rainbow Loaf

Guaishushu told himself, once in a while playing with colouring is okay since he did not have a chance to colour since after schooling.

Two months ago, he “accidentally’ brought a full set of colouring intended for icing decoration for about SGD 30 and he thought that it’s only SGD3. By hook and by crook, he wanted to use up some of his colouring and he knew that the only colour that he really needed and always used is the red colour for the preparation of red eggs during his kids’ Lunar calendar birthday celebration. Besides making the red eggs, he really don’t know what to do with these colourings!

One day, when he was browsing his Flipboard application in iPhone, he saw some rainbow loaf which is extremely beautiful but he is hesitant whether or not he should proceed to prepare this since it will need a lot of colourings.

Though it is generally not encouraged to consume too much food with colouring, but there should be government regulations that governed the import of permitted food colourings. If it is hazardous to health, he shouldn’t be able to get it in this “efficiently administered” country, Singapore. He searched the manufacturer Wilton LLC, apparently, it is an USA well established company set up in 1929. He told himself he is just a commoner, if this company had been established for so many years, their products must have been used by many people in the world and he should not casting doubt on its product reliability! In this thinking process, he gradually convinced himself that it is acceptable for him to prepare the bread!

He knew that if he bake the bread, he will have nothing to worry about the “marketability” of his rainbow loaf as his kids will definitely fight for the bread. While he was struggling to make a decision, he certainly thought of a blog “Bake for Happy Kids” by Ms. Zoe. Her blog title is correct, he should bake to make his kids happy!

This post is about rainbow raisin and cranberry loaf. Guaishushu aims are to share about the making of rainbow loaf and raisin loaf. Therefore if readers are not fond of making the rainbow loaf, he can just make the raisin loaf instead.



WHAT IS REQUIRED

This recipe was adopted from the Sarawak buns recipe here and some of the picture are in the above mentioned post.

  • 360 g of bread flour (you can substitute 10 g of bread flour with milk powder, in that case you need only 350 g of bread flour)

  • 70 g of beaten egg

  • 60 g of sugar

  • 40 g of butter – soften

  • 90 g of tangzhong (refer below)

  • 110 ml of fresh milk

  • 11 g of instant dry yeast ( 1 package)

  • 7 different types of colour gel or colouring (refer below)

  • 100 g of raisins and/or cranberry soaked in water/rum.

  • Pinches of salt

THE PROCESS OF MAKING RAISIN AND CRANBERRY RAINBOW LOAF

This illustration will use the Tangzhong method of bread making and it involved 4 stages in the following orders:

Part 1 – Making the Tanzhong (Water Roux)

Part 2 – Preparing and Colouring the Dough for the 1st Proofing

Part 3 – Wrapping of Cranberries and Raisins and 2nd Proofing

Part 4 – The Baking Process



Part 1 – Making the Tanzhong (Water Roux)

PLEASE REFER TO THIS POST for the making of Tanzhong and reasons and history of Tanzhong.



Part 2 – Preparing and Colouring the Dough for the 1st Proofing

  • Mix all ingredients except softened butter and beat at slow speed for about 5 minutes.
  • Add the softened butter and continue kneading at medium high-speed for about 20-30 minutes or when the dough did not stick to the wall of your mixing bowl and do not break when you pull the dough.

  • In a flat surface dusted with normal or bread flour, take out the dough from the mixing bowl and slightly knead it using hand for 1-2 minutes and shape it into a ball.
  • Weigh the ball and divide into 7 equal portions.

  • Take one dough and place some colour gel and knead until all the colour are even. Keep in a lightly greased bowl and covered with lightly greased cling wrap to prevent moisture loss.
  • Do the same for the remaining 6 dough with your desired colours.
  • Leave it to proof until almost double in size. This should be about 30-45 minutes depending on the day’s weather.

Part 3 – Wrapping of Cranberries and Raisins and 2nd Proofing

  • Lightly grease a loaf tin with a cover.

  • Get ready a small bowl of water and the raisins and/or cranberries to be wrapped in the dough.

  • Start with the lowest layer, take out the violet dough and use a roller to roll into roughly the size of the loaf tin.

  • Brush slightly with some water on the surface and place your raisins/cranberries.

  • Get the royal blue dough (second bottom layer) and use the roller to roll into roughly the size of the loaf tin.

  • Place the royal blue dough on top of the violet dough. Press the sides and ensure that the royal blue dough and the violet dough stick together.

  • Brush slightly with some water on the surface and place some raisins and/or cranberries.

  • Get the Kelly green dough (third bottom layer) and use the roller to roll into roughly the size of the loaf tin.

  • Place the Kelly green dough on top of the royal blue dough. Press the sides and ensure that the Kelly green dough and the royal blue dough stick together on the sides.

  • Repeat the same for all the other layers and finished with the lemon yellow dough on the top.


Part 4 – The Baking Process

  • Place the dough into the lightly greased loaf tin and let it proof until it is double in size. How long it will take depend very much on the weather and today, it took me another 45 minutes to reach the desired size I want.

  • Set the oven temperature to 200 degree Celsius

  • When the second proofing is done, i.e when the dough have double the size, bake in the oven for 30 –45 minutes..

  • At about 35 minutes or when you start to smell the aroma of the bread, use an oven thermometer and insert into the bread and see if the temperature inside the loaf is more than 90 degrees Celsius. If it is less than 90 degrees Celsius, your bread will not be cooked and it is likely that when you take out the thermometer, there will be some wet dough stick with your thermometer. In this case, continue baking until when you inserted again the oven thermometer, the thermometer shows at least 90 degrees Celsius. If you find that the top starts to turn brownish, you can lower the temperature by 10 degree Celsius. General rule of thumb is that if you are unsure, rather bake slightly longer than under cooked.

  • If you don’t have an oven thermometer, one way of testing is after about 45 minutes (which is a reasonable timing for this size of loaf), take out the loaf from the loaf tin and try to use your finger to knock the bottom of the loaf. If it is a hollow sound, your loaf is cooked, otherwise, the loaf is uncooked. Put it back into the loaf tin and continue baking for another 10-15 minutes until you are certain that the dough is cooked. Again, if the top layer has signs of getting burnt, lower the temperature slightly.

Note that the LOAF IS NOT BURNT. The dark brown color is the color of the violet dough on the side of the loaf.

CONCLUSION

While too much food colouring is not advisable, I choose to believe the Government’s stand on permitted food colouring. As long as consumption is not too often, such colouring shall not post a/any serious health hazard to our body.

While I am making this loaf, the kids were schooling. When they were back, I asked them to close their eyes and show it to them, “wow” are their reactions! They can’t believe that I am baking this loaf. They have requested to eat a piece of the bread but rejected by me because dinner is to start in 10 minutes time. In their mind, the loaf will definitely much tastier! Once in a while, why not bake your kids something “extraordinary” and joined them for a rainbow breakfast! Trust me, it will definitely a “colourful” and “fruitful” breakfast!

What I cooked today (家常便饭系列)- 30-7-2013

You may be surprised that today I am having some western meals. In fact, I have never cooked western meals before. This should be one of the very first full course meals that I have prepared. Well, today is my son’s birthday and I just want to expose him something different. In addition, my girl is crazy about baked potatoes and I thought why not I “try” to cook them something what they like……

I am really not good in preparing western meals and I have well underestimated the time of preparation. We only can had dinner by 7:30 pm and I am really exhausted by then.

The kids loved the food especially the grilled halibut. For this dish, I have seasoned it with Italian herbs (oregano and basil), salt and bit of butter. I topped with some mozzarella cheese and grilled it for about 15 minutes.  I used the “juices” secreted out from the fish to make into cream sauce and it is exceptionally sweet without any seasonings and condiments.

As for the Asian style grilled chicken, apparently they don’t really able to appreciate it because I have used chicken breast instead of chicken thigh meat. They are complaining a bit hard and fibrous. I may have over grilled the chicken breast.

The girls are complaining that the serving is too huge for them. However, she managed to finish the baked potato. A really simple side dish and personally I loved it. I have to say I never knew that baked potatoes tasted so good as I usually order fries rather than baked potato or meshed potatoes. This was requested by my girl specifically she wanted baked potato.

The cream of mushroom soup was good. Initially, I was thinking of using the ready made cream of mushroom soup. Since I have some canned mushrooms and some cream at home, I have decided to make my own cream of mushroom soup. I butter fried the chopped onions and garlics, add chicken stocks, fresh kernel corns and mushrooms and let it boiled until the onion were very soft. Thereafter, creams were added to thicken the soup. That was a hit also.

As for the dessert – durian cheese cake. I have prepared it about 2 days ago and it is really a very rich and creamy cake. It is very nice but both me and my wife have eaten in guilt. Usually, for 1 piece, 4 of us shared and for my kids, they don’t really have sweet tooth and after one two bites, they just stopped. Frankly speaking, for an 8 “ cake , after 2 days, I still have 4 pieces left (after 2 pieces given to my neighbours). I am in the process of compiling the post and will share with readers very soon.

Lastly, hope you like the post to day. A lighter note before I end, while I am writing this, I heard my boy told her auntie  (my wife’s sister} that one of his birthday wishes is  that “there will be endless supplies of sausages and eggs”, his favourite foods … Such a simple wish… Haha.

What I cooked today (家常便饭系列)- 25-7-2013

On 25-7-2013, Chicken rice served with sweet kernel corn and mushroom soup.

As I have not cook chicken rice for quite a while, I have decided just to have a one dish dinner – Hainanese Chicken Rice. You can refer here for my detailed write up on the preparation of Chicken rice. Alternatively, you can refer to Guaishushu’s Facebook page for simple pictorial instructions.

If you really observe the first picture, do you realize something are missing? Yes, two things were missing!  A very important garnish vegetables, cucumber slice. I always find that without cucumber slice, the whole chicken rice is missing something. Do you agree with me?

Secondly, there is a lack of green vegetable today. Usually, I would have a plate of blanched vegetable to go with it but because today is Friday, I have finished all the green vegetables in the fridge, Haha. I have said before in my earlier post, usually Sunday to Tuesday or Wednesday are leafy green vegetables and Thursday to Saturday are usually beans, melons or roots type of vegetables because it can be kept longer. We do marketing once a week and I am a rational cooker, I cooked based on First In First Out principle… I don’t usually cook impulsively..

As I have additional chicken stock from simmering the chicken, I have decided to open a canned kernel corn and turned it into a corn soup. When I made the cake yesterday, I have some egg whites left and I just stir and “throw” inside the soup. It become a simple soup like the one you have in the chicken rice store.

Usually, when I cooked chicken rice, I will cook more than what is required. The rationale is that it take some efforts to prepare chicken rice, why not prepare some more. In addition, any left over chicken rice can be “recycled” and is a top choice for fried rice. Since it is already “marinated” rice and you need not to add much condiments and oil when you fried it.

Other than frying overnight chicken rice, we used to make it into chicken porridge for next day’s breakfast. After simmering the chicken, if you still have the chicken stock left, just keep it. In the next morning, just throw in the left over chicken rice, any chicken meat left (of course de-boned and possibly shredded into floss), add in a bit of condiments, it will become a bowl of chicken porridge.

Will it harm you to eat overnight food?  I do not want to think about it and as long as it is properly kept with no possibility of contamination, it should be ok. How about how grandparents or parents? Is it not the Westerners used to heat up frozen foods that were prepared well in advance?

Impromptu Ixora Birthday “Cup Cake”

Preparing an impromptu birthday cake for one of my internet friends who “requested” me to “bake” a birthday cake for her and wish her happy birthday over the internet. This cake is decorated with ixora flowers which is abundant in Malaysia and Singapore.. Do you mind if someone posted this cake to your timeline wishing you happy birthday?

Butterfly Cupcake

This is an extremely simple cup cake recipe. Add all ingredients and mixed well, bake and you get the cake. It was served with cream and strawberry jam as the basic cup cake have very little sugar. it was dusted with sugar powder. Do you think it will taste nice?

This should be a celebration cake but need further modifications. I am doing  in a rush and therefore  the workmanship is really terrible. Haha.


Modified Version of Raas Malai

This is a dessert originated from India and an extremely popular in South Asia. It was served in wedding ceremony and other important festival occasions. Traditionally, the raw ingredients are paneer (Indian Cheese) and milk. The recipe is adopted from http://free-advertising-ey.blogspot.it/2013/07/raas-malai-sweet-from-bangladesh.htmlk with some modifications to suit the Chinese taste buds. Modifications include reducing the use of spices such as cinnamon, cardamon and etc.. In addition, strawberry were added.

 
As this dessert look milky and cheesy, I have decided to let my kids try out the dessert exposing them to more international cuisines. The preparation are rather coincidence. This afternoon when I have over whipped my cream, I thought I might as well used this over whipped cream to make the dessert. I added fresh milk to the over whipped cream and heat until it boiled. Knowing that my kids will not really like spices like cardamon, cinnamon , I have decided to tailor it to a more Chinese taste buds. I meshed 5 ripe strawberries and add to the milk and let them boiled together with the milk.

As for the cheese balls, I have used mozarella cheese to make it instead of paneer or cheddar cheese. I meshed 2 strawberries, added to the cheese, added 1 tablespoon of water and shaped it into small balls. My balls are rather small compared to the authentic because I know my kids wouldn’t be able to take such a big cheesy ball.  I dropped the balls to the cool milk and put in the fridge. During serving, I found it too creamy (possibly due to my over whipped cream), I have further diluted with cold fresh milk and cut slices of fresh strawberry to go with it.

 

Verdict: Extremely nice sweet milky soup with strawberry flavour. As long as you like milk, I do not think you have any reasons not to like it.

As for the cheese balls, my girls can take all but my boys feels a bit too rich and salty to him. As for me, I loved the cold milk but for the cheese balls, one or two should be Ok but not too much as when I was young, Chinese were not exposed to ” cheesy things”…. Haha.. I will say those who like cheese, go ahead and make this milky desserts.. It is just delicious.

Oh! It is time for me to submit my daily report card! Haha! Tired as I have a lot of “projects” today.

As for the dish, all are rather common dish except the miso pork belly which is a new dish “invented” by me.


Miso Pork Belly

The inspiration of this dish is from a famous Chinese dish fermented bean curd fried meat(南乳炸肉). While the fermented bean curd (腐乳)belong to Chinese and Miso is the fermented bean sauce of the Japanese. Therefore, I have decided to “invent” this dish purely using Japanese condiments. Unlike the Chinese fermented bean curd meat dish, the miso paste is much tastier and therefore this dish did not use additional condiments except some sugar to enhance the flavor. Miso is quite salty and the sugar will helps to negate its saltiness to a more balance taste. This newly created dish is a dish that utilizes Japanese ingredients but prepared using the Chinese cooking method! Therefore, shall I called it a fusion dish?

Frankly speaking, a rather unhealthy dish and I do not think I will cook it that often. I will in my next attempt try to use chicken cubes or fish slices or even prawns. I strongly believed the taste will definitely blend.

Pineapple Tarts

Besides that, today, I have made a batch of closed version of pineapple tarts. The intention is actually for the celebration of Hari Raya Aidilfitri, a Muslim festival. I always think that as a Malaysian or a Singaporean PR, I shall play my part to contribute something for this celebration.

I am not entirely satisfied with this batch because the skin have a slight crack. However, I know that the reason is because I am too “greedy”. I have used too little dough for my filling causing my tarts to crack when the pineapple jams expand. That is not a great deal and I am still likely to share the recipe with readers soon. Again, the method of preparation is totally different from what you may find in the internet as I have discovered this method unintentionally during my Chinese New Year preparation.

Steamed Sugar Cake (Pak Tong Koh) or 白糖糕

I have a recipe book in the balcony where i sit and when my boy looked inside the book, he found the type of Chinese steamed cake that he liked. He immediately asked me to prepare. I have hold up this “assignment” for more than a month and as I was clearing my kitchen shelves, I found some rice flours that have been with me for quite a while. I thought why not I just prepare for him so that he will not pester me any more. I cooked the rice flour, let it fermented for 8 hours and after cooking the dinner, I steamed it and this is what i get!

I have yet to cut it as  I want to leave it overnight and completely cooled. It looks ok and who know what is inside like. Hope everything is okay.

For those readers who are new, I have to reiterate that this series was created with the intention for people to “peep” into my kitchen and see how I rotate my dish, create my dish and it is best that readers take this as a casual reading. Hokkien Style Fried Prawn Mee 福建炒虾面

For tonight’s dinner, there is nothing to shout about. When I am preparing dinner, my nice neighbour gave me a big bowl of Hokkien Style Fried Prawn Mee. As this can be a dish by itself, I have decided to stop preparing any more dish since both adults will be eating the prawn mee and the children had their favourite Bok Choi soup and some sweet chicken called “three cup” chicken.

Three Cup Chicken (三杯鸡)

The main ingredients of three cup chicken is Thai basil (九层塔)。Most people misunderstood that “3 cup” chicken is cooked with 1 cup of wine, 1 cup of soya sauce and I cup of  sesame oil. However, if we follow that assumptions strictly, it will be extremely oily with very high salt content. Therefore, to master the making of 3 cups chicken, the measurement of oil and soya sauce should be reduced accordingly. As a general rule of thumb, soya sauce volume should be half the volume of wine but twice the sugar volume. In another words, assuming that the sugar unit is 1cup, then soya sauce volume with be 2 cups and wine will be 4 cups. Note that no water is used in the cooking and medium heat is used to braise the chicken until the liquids dries up. Thai basil is added 2 minutes before you off the heat.

Wild Hibiscus Tea (洛神花茶)

Besides the above dishes, I have boiled some Roselle/Rosella/Wild Hibiscus Tea (洛神花茶)。I usually boiled a very big pot which is very concentrated and dilute it when I want to drink. I like the drink as it is extremely thirst quenching and inhibit carbohydrates intake.

I have also used some to make into some ice sticks which I usually have one after my dinner.

When you boiled the drinks, don’t throw away the rosella flowers. The boiled flowers can be eaten as snacks but for me, I have used it to make “banana rosella” smoothies. (you can refer to the above link and see how the boiled flowers look like)

Lastly, for lunch , I have cooked roast duck Bee Hoon from the duck bones of the roast duck that we had yesterday. I used the duck bones to make the broth, add some Bee Hoon, mushrooms, shredded duck meat, some dry bean curd sheets and egg omelettes stripes. The good thing about this dish is that there is not need to add seasoning and the broth is very sweet already. That used up all my duck bones and now left  2 drumsticks. Is it not funny that we have eaten all “bones” without eating the meat? I told readers before, both my wife and my kids do not like meat and yesterday is one of the blue moon days that I bought the whole duck. Therefore, I have to think of a way to “dispose off” the entire duck.. Haha..

Let’s See How An Asian Make The Tomato Pasta Sauce From Scratch ….

INTRODUCTION

This is the homemade pasta sauce from scratch. I learned this many years ago from one of my French friends staying in Paris, France. When I visited her, she is preparing the pasta sauce and I can vividly remember certain steps in the preparation but sad to say, I can’t really recall the happy time we had during the dinner.

This post will consist of two parts:

Part 1  –  the making of homemade pasta sauce and

Part 2 – the making of baked pasta with pineapple

PART I – MAKING OF HOMEMADE PASTA SAUCE


WHAT IS NEEDED

This recipe is adequate to make tomato pasta sauce for at least 6 persons and have about 600 grams left for baked pasta.

  • 1 kg of tomatoes 
  • 2 big size capsicums (preferably red in colour but green colour is acceptable) – optional 
  • 3 big stalks of celery – optional and in this illustration, I did not include this 
  • 3 large onions 
  • 6 chicken franks – optional
  • 500 g of fresh button mushroom (can be substituted with canned mushrooms) – optional 
  • 500 g of minced meat (beef or chicken or pork). In this illustration, pork was used.

  • 20 cloves of garlic 
  • 30 grams of butter (can be substituted with olive oils)
  • 1 tablespoon of Italian dried herbs 
  • 100 grams of mozzarella cheese 
  • 10 tablespoons of tomato ketchups (optional, for “colouring” purposes) 
  • 1 pack (about 300g) of pasta of your choice. 
  • Seasoning (Salt, black pepper, sugar)

PREPARING THE RAW INGREDIENTS……..

  • Clean the tomato and all other raw ingredients.
  • In a big pot, bring some water to boil. Place the tomato into the hot water and let it boil for a few minutes or until the skin slightly peeled it off. Note that as long as the skin start to break, you can transfer to the cold water as mentioned below.
  • Get ready a pot of icy cold water. Place the tomato in the icy cold water.
  • Peel off the skin by hand which is rather easy.

  • Cut opened the de-skinned tomato. Use a spoon to scoop out the seeds.
  • Use your hand to squeeze off the seeds and/or juices into a clean container.
  • You can either throw away these juices or keep it as tomato juices. It is okay to drink the seeds as it is very fine and slippery.
  • Set aside the tomato flesh for future uses.

  • Traditional way of making pasta sauces do not really utilize food processors. However, I have opted to use food processors to cut short the braising time.Traditionally, all items were julienned or cut into small chunks for the cooking.
  • Use the food processors to cut the garlic and onion in small chunks (need not to be overly fine since you are going to braise them), set aside.
  • Use the same blender to blend the red and green capsicum or celery (if any). For celery, you will need to de-skin the celery first before you put into the blender. The red and green capsicum and celery will help to add volumes and flavour to your pasta sauce. If only tomato is used, it may be too sour.

  • Cut the chicken franks into small chunks. This is optional and rather “Asian” taste. I have put this because my kids love to eat chicken franks.
  • Cut your button mushrooms into thin slices. Canned mushrooms works equally well.
  • Minced meat of your choice. Traditionally, beefs were used. As I do not eat beef, I have substituted with minced pork or at times minced chicken. I have bought the ready made minced meat from the supermarket.
  • Grated mozzarella cheese. I have opted to buy the grated mozzarella cheese but it is not necessary at all. If you have un-grated cheese, you can just cut a slice (without grating) and put it in the sauce later. It will melt subsequently.

THE COOKING BEGINS…..

  • In a big pot, put the butter and let it melt.
  • Add in the chopped garlics, stir fried until it turns slightly brown or the aroma start to emit.
  • Add in the chopped onion and stir fry for 2 minutes.
  • Add in the chopped green and red capsicums and stir fry for another 2 minutes.

  • Add in the chopped tomato and bring them to boil under high heat.
  • Once boiled, turn to medium heat and let the mixture simmer for at least half an hour.
  • Add in seasoning and herbs and let them boil for another 5 minutes. Seasonings can include pinches of sugar, black pepper and salt. As for the Italian herbs, I have bought the over-the-counter dried herbs which consist of basil, oregano, garlic, thyme, red bell peppers and parsley.
  • If you just want pure pasta sauce without any meat. You can stop here and you can keep it in sterilized containers and keep for at least a month in the fridge. The steps that follows are meat sauces for the spaghettis or other pastas.

  • Add in your minced meat and cooked for another 2-3 minutes.
  • Add sliced mushrooms and chicken franks.
  • As this is home made pasta sauce, the colour will very much depends on the types of tomato that you bought. In Singapore and Malaysia, it is rather hard for you to find Roman tomato, we can just use whatever tomatoes we have. However, the colour may not be that appealing, you can add in bottled tomato sauce to make the colour darker. In addition, it will help to enhance the flavour of the pasta sauce.

  • Continue to boil for at least 10 minutes, add mozzarella cheese and once boiled, off the heat and your home made pasta sauce is ready.

COOKING THE PASTA…..

This is rather standard and you should read the instructions of the packaging for the pasta that comes with it.

  • In a pot with about 2 litres of water, add 2 tablespoons of cooking oil (olive oil) and pinches of salt. Bring to boil under high heat.
  • Add the pasta and continue to boil for 8-10 minutes or till desired texture.
  • Drain away hot water and pour some cold water on top of the pasta for one minute.
  • Drain, add in pasta sauce and garnished with parsley or any other desired herbs  and it is ready to serve.

CONCLUSION

  • Home made pasta give you the a full flexibility of adapting the ingredients and herbs to your family taste buds and health objectives. Most ingredients are substitutable and trial and error or mix and match appeared to be the best approach to design your own favourite pasta sauce. I have also opted to use food processor in the preparation process and that have cut short the preparation tremendously.

What I cooked today (家常便饭系列)- 18-7-2013

On 18 July 2013, porridge serves with a vegetable dish and a meat dish. The vegetable dish is baby pak choi with oyster sauce (耗油小白菜)and braised meat (chicken and pork belly) (卤肉)。

I seldom cooked porridge for dinner. Tonight, I suddenly have the urge to have porridges since my wife and my kids also like to have porridges. I have braised some meat and a vegetable dish to go with it and of course, some left over dishes from last night.

Today, when I searched my fridge, I found that I have a box of bosc pears (博斯克梨) and some cut dragon fruits (龙珠果) which is already in my fridge for quite a while. The pears are very ripe and I thought I might just make some desserts for the family and here comes my Chinese Style Poach Pear and Dragon Fruits Desserts with Rock Sugar (博斯克梨龙珠果炖冰糖)。You may want to know how to make the dessert by following the links to Guaishushu’s Facebook Page.
