Is Pavlova Originated From Australia, Russia or New Zealand?–Strawberry and Blueberry Pavlova

INTRODUCTION

Yesterday is really a busy day for me. I have been making mayonnaise, baking pizza and this Pavlova. By the time  I have to take picture of this Pavlova, I was feeling extremely tired and after I ate one slice and kept 3 slices for other families members, I gave away the rest to my neighbour who were having some sort of house gathering. I hoped I have adequate pictures to share with readers.

Pavlova actually sounds familiar to me. Just like Vladimir, Sergei, Liana and Nathasia, the name sounds so Russian. I have spent some times in Russian before and one of my ex-colleagues do carry the name Pavlova. In fact, I do not know it is the name of one of the famous desserts until very recently when I did a read up on meringue, macaroons and other egg whites based pastry items.

WHAT IS PAVLOVA?

Per Wikipedia:

Pavlova is a meringue-based dessert named after the Russian ballet dancer Anna Pavlova. It is a meringue dessert with a crisp crust and soft, light inside.

The dessert is believed to have been created in honour of the dancer either during or after one of her tours to Australia and New Zealand in the 1920s. The nationality of its creator has been a source of argument between the two nations for many years, but formal research indicates New Zealand as the source.

The dessert is a popular dish and an important part of the national cuisine of both countries, and with its simple recipe, is frequently served during celebratory and holiday meals. It is a dessert most identified with the summer time, but is eaten all year round in many Australian and New Zealand homes.

Meringue based dessert will mean this dessert only utilizes egg whites and some sugar. It is not really a common dessert in Singapore and Malaysia. The challenge is to prepare a Pavlova that had a crispy outside of soft cotton liked inside. Preparation is not really that tough but patience is needed in the baking of this simple meringue.

WHAT IS NEEDED

  • 4 egg whites (at room temperature)

  • 1 1/4 cups of icing sugar or castor sugar

  • 2 teaspoon of potatoes starch/corn starch

  • 1 teaspoon of lemon juice

  • 1 teaspoon of vanilla extract

  • Fresh fruits of your choice. In this illustration, I have used fresh strawberry and blueberry.

Note:

  • The egg whites have to be at room temperature. Colder egg whites are more difficult to beat to peak condition.

  • I have substituted the castor sugar with icing sugar as it will be easier for it to dissolve in the egg whites. If it is difficult for you to get icing sugar, just blend the castor sugar using a food processor.

  • Usually, corn starch is used. However, as I did not have corn starch with me, I have used potatoes starch. By the same logic, sweet potatoes starch and tapioca starch can also be used. What is needed is a small quantity of flour that is light and smooth to help holding the Pavlova structure.


STEPS OF PREPARATION

  • In a baking tray. have a piece of baking/parchment paper. Use a 8” round baking tin and draw a big circle on the baking sheet. Set aside for later use.

  • In a mixing bowl, Add egg white and beat until soft peak form. Add in icing sugar spoon by spoon and continue to beat until the egg white is thick and glossy.

  • To check if all sugars have been dissolved, rub a bit of the beaten egg whites (meringues) between the thumb and index fingers. If it is smooth, it means that the sugars have been dissolved. If it feels sandy, it means that the sugar has yet to be dissolved. Continue beating for another 1-2 minutes and test again.

  • Add in vanilla essence and continue beating until it is well mixed.

  • Off the machine if the meringue is glossy and in its stiff peak form. Stiff peak form means when you hold up the beater, the meringue can point upwards as shown in picture number 4.

  • Take out the mixing bowl. Add/sprinkled the lemon juices. Sift in the potatoes/corn flours.

  • Use a spatula to fold in the flour and lemon juice quickly. Handle lightly until all the lemon juice and flour are well mixed.

  • Place the meringue on top of the baking paper within the circle drawn. Smoothing the edges.

  • Baked in the oven at low temperature of 130 degree Celsius for about 60-90 minutes or until the outer crust are dry and pale cream colour.

  • IMPORTANT: Leave the Pavlova inside the oven with the door ajar and let it cool inside the oven until it is completely cool. It is generally okay if the middle part of the Pavlova collapsed as we will be decorating with whipped cream.

  • PRIOR TO SERVING, beat about 200 ml of whipping cream until top peak and placed on top of the Pavlova. Place your fresh fruits on top of the Pavlova.

CONCLUSION

Pavlova is good to be served as a dessert. It’s sweet crusty tops and sides goes well with most fruits. One can also consider using fruits such as Kiwi and mangos. The Pavlova can be prepared in advance and keep for 3-4 days in an air tight container. Of course, the size of Pavlova have to be reduced accordingly for it to store in the container. It can also be made into a one bite size.

If you are health conscious, you can substitute the whipped cream to low fat whipped cream and slightly reduce the amount of icing sugar used. Remember whipped cream and fruit toppings shall only be used prior to serving as the whipped cream and fruit juices will make the meringue soggy if not consume on time.

As I have some peanut butter sitting in my fridge for ages, I have decided to prepare some Peanut Butter muffins . There are no changes to recipe except :

  • Use peanut butter weight as a starting point which is about 156 grams and all my ingredients used to be about 156 grams for eggs, flour, sugar .
  • Did not add the caramelized chocolate chips

My kids made these muffins with my help. I just helped them to get some ingredients that they did not where it was stored.

I did not even look at the measurements that they took as I was busy of taking pictures of their participation. Why this was possible of course was because of the easy recipe. The recipe that followed the one number baking ratios now extending to muffins. There were many post that uses one number baking ratios in my baking and in the post “ dates fruit cakes , you can see all my references of cakes made using one number baking ratio in that post.

After my kids revised their home work today, they were bored and I thought I might as well asked them to make the muffins since it was really easy to  prepare. In fact they were so happy when I told them that I need their participation after revising their home work. My girl who liked to procrastinate suddenly finished her homework very quickly. Initially, it was not my plan to get the boy involved, however, when the boy saw her sister enjoyed herself measuring the ingredients, he insisted that he wanted to join in ‘the game” also. I therefore concurred to let him joined in the “game”

I did not look at any recipe for this muffin. The principle of using one number baking ratio is that it should be applicable for all cakes.  As I want it to be a bit dense, I have opted not to cream the butter and egg separation method (using these two methods will definitely end up to be a cup cake). In addition, as I have been quite tiring of washing all the utensils these few days, I chose not to use an mechanical egg beater. At the end, I have used a mixed and baked method to prepare the muffins.

In addition, I have substituted butter with peanut butter and most important of all, I have used eggs as the starting weight of making these muffins. This will save sometime for the calculation of milk.

These muffins started with 2 eggs that weighed 117 g, therefore, that follows will be peanut butter 117g, sugar 117g, flour 117g and milk 117 g. With these measurements, I am sure any body without much baking experience will be able to prepare this. Easy to remember ratio with easy preparation methods.

WHAT IS REQUIRED

  • 2 whole eggs

  • Peanut Butter – same weight as eggs – melted and set aside

  • Sugar – Same weight as eggs

  • Milk – same weight as eggs

  • Self raising flours – same weight as eggs

  • Caramelized  chocolate chips – half the weight of eggs

  • Mozzarella cheeses – half the weight of eggs  (optional)

STEPS OF PREPARATION

  • Pre heat oven to 180 degree Celsius

  • Get ready5-6 muffin cups.

  • Melt the peanut butter in a microwave oven for 1 minute.
  • Transfer to a big mixing bowl, add eggs and sugar and use a hand whisk to whisk until combined.

  • Add in sifted flour and milks (alternately) until all flours and milk are added.
  • Add in caramelized chocolate chips and mozzarella cheeses.

  • Mix well and transfer to the muffin cups.

  • Bake at 180 degree Celsius for 20-25 minutes or when a skewer inserted comes out clean.

You may have noted that I have sprinkled additional cheeses and caramelized chocolate chips. However, that was not advisable because this batter is rather wet, the additional weighs will push down the muffins causing it to drip sideway. Therefore, I will advise readers to by pass this step. Just to let you have a look, this is the “elephant muffins” made by my kids. All the 5 muffins we made have these “elephant trunks” due to the addition of chocolate chips and mozzarella cheeses. Ha-ha.

CONCLUSION

Is it not this muffin is so easy to prepare especially with one number baking ratio. If my kids can made this, who else could possibly not able to prepare this?

What? Baked Your Rice? Yes, Try Carbonara Cheesy Bacon Baked Rice

INTRODUCTION

The main staple food for Asians are rice. We have porridges, fried rice, plain white rice, steamed rice, braised rice ….. But we seldom have baked rice.

Bake is usually associated with oven which is rather uncommon to Asians until the last 5 decades (pardon me if I am wrong)….Baking rice is still something not really common especially in Malaysian and Singaporean Chinese household cooking. One could easily have baked rice especially in Portuguese restaurants particularly in Malacca, Malaysia and Macau SAR in Peoples Republic of China.

Is baked rice nice? If you are a generation who get use to Western cuisines, I presumed you will concur with me that it is another good way of appreciating cooked rice! Children who are exposed to Western numerous fast food chains such as Kentucky, McDonalds, Pizza Huts etc. will definitely like this simple comfort food that is packed with milks and cheeses.

Creamy, cheesy and soft are the words to describe the textures of this baked rice.

Of course there are many different types of baked rice, as an Asian, I will definitely prepare using ingredients that are well liked by the kids here.

This post is  about CARBONARA CHEESY BACON BAKED RICE. It is prepared using Carbonara sauce with lots of bacons, kernel corns, canned button mushrooms and etc.… In addition, sensing not many households may have a conventional oven, this recipe called for a mini oven that is movable .. Of course you can used an oven if you wish to!


WHAT IS REQUIRED

  • 500 grams of cooked rice (overnight rice is acceptable)
  • 50 grams of bacon – small pieces
  • 100 grams of onion– chopped
  • 100 grams of canned button mushrooms – slices
  • 100 grams of canned creamy sweet corns
  • 30 grams of Japanese “crab meat” (optional)
  • 200 ml of cream + fresh milk (preferred 50% cream : 50% fresh milk)
  • 150 grams of mozzarella cheeses
  • 2 teaspoons of dried/fresh herbs (basil, dill, oregano etc.) (Optional)
  • 1 cup of water
  • 1 tablespoon of olive oil/butter

Note:

This is a good way to get rid of your overnight rice. Of course you can cook with fresh rice for the dish.

This is a dish with full flexibility, except rice, cream+milk and cheeses, almost other ingredients can be substituted.

STEPS OF PREPARATION

  • Get ready an 8”x8” inches baking tin or any casserole that are able to withstand high heat.

  • Put the rice in a big mixing bowl and set aside for later use.

  • In a sauce pan, put in the olive oil and bacon and stir fry until the bacon were fully fried and the aroma of bacon starts to emit.

  • Add in the chopped onion, stir fried until the onion is soft.

  • Add in 1 cup of water, add in chopped mushrooms, creamy sweet corns and bring to boil under medium heat.

  • Once boiled, add in the cream and herbs and off the heat. Stir and mixed well.

  • Pour on top of the rice and use spoon to mix well.

  • Transfer the well mixed rice to the baking tin. Add in more milk if possible.
  • Place in more creamy sweet corns or other side ingredients such as crab sticks if desired.

  • Sprinkled sparingly with mozzarella cheeses and more herbs.

  • Bake the rice in the mini oven for about 30 minutes or until all the cheeses have become soft and melted. It should be noted all ingredients are cooked ingredients. Therefore, baking the rice is only to ensure that all the cheeses have melted and  speed up the process of sauces absorbed by the rice.

VARIATIONS

Of course, if you want to cut short the preparation process, you can used the ready made carbonara sauces or cream of mushroom soup or cream of chicken soup. The end results will be equally tasty.

You can also substituted with fresh corns, baby corns, even Asian fish cake if your kids like it and anything that will wake up your families palates!

An easy to make comfort food good when you runs out of time to cook a decent meal. It’s full flexibility make it easy to tailor your family taste buds. Try this way to get rid of your overnight rice.

One Number Baking Ratio Adventures Continues… Grapefruit Cognac Pound Cake With Grapefruit Posset…

INTRODUCTION

One number baking ratio adventures continues and gradually extends to other pastry. I have explained in this post about how I want to apply this ratio to cup cakes, muffins, fruit cakes, layered cakes and other pound cakes. The main objective is to further testify this ratio and giving assurance that this easy to remember simple ratio will beneficial lazy people like me. Very briefly, Guaishushu believes that egg : flour : sugar : butter : milk (or other liquids) can be 1 : 1 : 1 : 1 : 1, hence called it “one number baking ratio”.  You may also be interested in the following posts based on principle of one number baking ratio:

Today, he is going to twist a little bit to become a fruity pound cake and served with grapefruit posset – a traditional Western drink/dessert.

ONE NUMBER BAKING RATIO VS FRENCH’S QUATRE à QUATRE

As one reader pointed out that the ratios that I am using is basically the “quatre à quatre” ratio used in French cake making and I am basically just reinventing the wheels and revert back to the traditional ratios.

I tends to agree  with this and in fact, I am ignorant about the above ratios before the reader pointed out. I have to thank him for his knowledgeable input.

It is really a coincidence that all the while I am fond of using one number and it would be ideal if it applies to all cakes. I have written in the reply to the reader: I do not think that I am brilliant enough to create a good theory as cooking is just my passion! However, if you analyse in details,“quatre à quatre” ratio differs from Guaishushu’s “one number baking ratio” in that there is a portion of milk (or other liquids) which I insisted to be included in this ratio. So, Guaishushu is just promoting this modified traditional ratios instead of remembering different ratios for different ingredients and for different cakes.

WHY THIS CAKE?

Grapefruit again? Yes, though Guaishushu just issued a post on Grapefruit Chiffon Cake – Grapefruit Chiffon with Grapefruit Citrus Glaze,… Ever Try This?, however, as grapefruit is very cheap in Singapore this month, I can’t help but to grab another 5 large and juicy grapefruits for SGD2.85 and I am thinking of preparing some other cakes with this fruit. While thinking of what cake to bake, i realized that I have a cognac sitting in my kitchen shelf for many years that I have never used it because I am allergic to alcohol. In fact, when I tried to open it, the cork on the bottle have broken (too dry) and I have to sift the alcohol and transfer to another small bottles.

This cake is rather simple to make and again it is based on Guaishushu’s one number baking ratio. To make is slightly different, I have substituted some portion of milk with grapefruit juices and  addition of some grapefruit peels. With the aim of differentiating this cake with other cakes, I have made the cake slightly pinkish and of course all these colouring are optional.

Note that the recipe applies equally well to an orange cake. Just substitute grapefruits with oranges.

SELECTION OF GRAPEFRUITS AND PREPARATION OF GRAPEFRUIT PEELS

I will take this opportunity to share with readers about the selection of grapefruits that are juicy after many years of observation!

The grapefruits on the left were smooth with lights reflection. As it is smooth, it implied that the air holes in the skin are very small and therefore moisture loss will be less than the grapefruit on the right. As contrast to grapefruit on the left, grapefruit on the right appeared to have more holes and if you touch it, you will find some unevenness on the surface. More moisture will be lost and at times, it will feel a bit like a sponge when you squeeze it. Therefore, when one buy a grapefruit, just ensure that it is smooth and full when you squeeze it.

Preparing The Grapefruit Peels

I am peeling the grapefruit using the above peeler. I just peel in the S shape and a nice pattern will evolve. Try not to peel too deep as the white spongy skin can be rather bitter. Make sure the grapefruits or oranges was thoroughly wash before it the peeling begins. Cut into small strips and chopped fine before adding to the batter as required below.



WHAT IS REQUIRED

  • 250 grams of white sugar (divided into 100 grams for beating of egg whites and 150 grams for beating of egg yolks)

  • 250 grams of self raising flours (sifted)

  • about 250 grams of egg white and egg yolks (about 5 eggs separated into egg yolks and egg whites) (Note below for calculation)

  • 150 grams of milks (Note below for calculation) – Balancing

  • 100 grams of grapefruit juice (Note below for calculation) – Fixed

  • 150 gram of grapefruit peels

  • 5 tablespoons of rum or any other alcoholic drinks (cognac, whisky or others) – Optional

  • 2 teaspoons of cream of tartar (optional)

Note: Calculation of liquid required

In accordance to one number baking ratio – eggs plus milk should be equal to 500 grams.

Today, my eggs yolks and egg whites worked out to be  298 grams, therefore, the balancing of milk used is 500 grams (total milk + eggs) less 100 grams (grapefruit juice) less 298 grams (egg yolks + egg whites) =  102 grams of milk (actual usage after considering egg size)

 


STEPS OF PREPARATION

The steps of preparation will involve:

  • Beating of egg whites , creaming of butters, mixing of flours and folding of egg whites

  • Making of pinky patterns (optional)

  • Baking

  • Making the grapefruit posset (optional)

Preparation…

  • Preheat the oven to 180 degree Celsius



Beating of egg whites , creaming of butters, mixing of flours and folding of egg whites

  • In a clean, grease free mixing bowl, add egg whites, cream of tartar and sugar. Beat using the machine whisk to whisk the egg whites until firm peak. Spoon the filling into a clean bowl and set aside for later use.

  • Change your whisk to a K beater, place your remaining 150 g sugar and butter, beat until light and creamy.

  • Add in the grapefruit peels and eggs yolks and use slow speed to “mix” until well mixed. Eggs yolk should be added one by one and scrap the bottom of the bowl to ensure no unmixed egg yolk settled at the bottom of the mixing bowl.

  • Add in 1/3 of the sifted flours, add in 1/3 of milk and 1/3 of the grapefruit juice, used slow speed to mix together. Repeat for the other 2/3 portion. Off the machine and bring out the mixing bowl.

  • Once well mixed, fold in the egg white swiftly and lightly until the batter are smooth.



Making of pinky patterns (optional)…

  • Take out about 1/4 of the of the batter and add 2 drops of red colouring (optional). Mix well.

  • In the greased cake tin (note that I have also slightly floured it but this is optional), start with 4 big tablespoons of the beige batter. Add 2 tablespoons of pink batter on top of the beige batters. Shake it slightly so that the batter spread over a wider surface. Add another 3 tablespoons of beige batter on top of the pink batters follow by 1 tablespoon of pink batter on top of the beige batter. Do the same for the next step using 2 tablespoons and finally one tablespoon until all the batter have finished. In the event you still have left over, just create another pattern with the batter that you have!



Baking….

  • Shake the baking tin slightly and baked at 180 degree Celsius from the first 30 minutes.

  • Reduce the temperature to 150 degree Celsius and bake for another 15 minutes or until the top turn yellowish brown and until a skewer comes out clean.

  • Transfer it to a wire rack and let it cool for at least 1 hour before cutting the cake. It is best to let it rest overnight if time permits.

Making of Grapefruit Posset

WHAT IS REQUIRED

  • 120 grams of white sugar

  • 1.5 cups of cream

  • 150 grams of grapefruit

Note: Most posset will called for double thick cream, however, since I wanted it to use as some form of toppings, I will use normal cream for whipping. As such, the curdling will not be less strong and easier to pour.


STEPS OF PREPARATOIN

  • In a sauce pan, place the cream and sugar.

  • Cooked under low heat and bring to boil and let it boil slowly for 2-3 minutes.

  • Off the heat and add in the grapefruit juice. Chilled for at least 3 hours or overnight.

  • Pour on top of the cake and let it drip naturally.

Note that whether you posset will successfully curdled will very much depends on the acidity of your grapefruit. If your grapefruit is sour, it will curdle easily. If it can’t curdle, add in few drops of fresh lemon juice. The use of normal cream and grapefruit juice will produce a posset that are slightly runny which is easier for you to pour on top of the cakes.

CONCLUSION

A simple cake to make using one number baking ratio. However, the twist to add in grapefruit peels and cognac transformed it into a cake that is full of fruity and cognac fragrance. While posset is generally served with biscuits, the modified grapefruit posset goes well with this cake and will heighten and wake up one’s palate especially  with a cup of Earl Grey tea!

Don’t Sandwich Me, I Can’t Breathe … Baked Hasselback Potatoes With Bacon And Mozzarella Cheeses..

INTRODUCTION

I remembered that  immediately when I read the recipe Easy Bacon Potatoes published by Ms. Paula Jones’s,  I immediately shared in my Google Plus timeline and promised wanted to try out the recipe.

Yesterday, when I needed to prepare a lunch in a rush, I suddenly thought of this recipe but was unable to locate it. I searched high and low but in vain.

Therefore, based on my recollections, I just “anyhow” put together bacon and potatoes and this is what I have prepared.

Taste is superb but sizes and some of the ingredients were totally different from Ms. Paula Jones recipes from www.callmepmc.com. Hers’ definitely look more appetizing but too sad, I only managed to find out the recipe when I am searching to credit her recipe while writing this report.

WHAT IS REQUIRED?

  • 10 small washed baby potatoes

  • 4 thin pieces of bacon cut into small rectangular shape

  • 1 teaspoon of general Italian herbs for Italian cooking (optional)

  • 1 tablespoon of soft butter

  • 1 teaspoon of salts

  • 1 cup full of mozzarella or cheddar cheese or parmesan cheese

  • 2 large tablespoons of mayonnaise or sour cream (optional)

  • 2 slices of breakfast cheese (optional)

STEPS OF PREPARATION

  • Wash your baby potatoes. Slightly cut off one side so that the potato can stand on its own.

  • Use a sharp knife to slice open the potato with about 0.5 cm thick towards the direction of the bottom but do not slice through.

  • Rub with salt, butter and Italian herbs (optional). Set aside for next steps.

  • Slice the bacons into thin strips and place it in between the spaces between the cut potatoes.

  • Place the potatoes in low casserole dish or baking tin.

  • Baked in the oven at 180 degree Celsius for at least 30 minutes.

  • Take out and sprinkled with mozzarella or cheddar cheese and baked for 10 –15 minutes or until the cheese had melted.

  • Preferably served hot with generous amount of sour cream or moderate amount of mayonnaise or toppings of your choice. Plain serving is acceptable if preferred.

  • This is good to go with any Western set meals and as an alternative for baked potato skins, mash potatoes, potato chips or any other carbohydrate loaded meal items.

  • If you runs out of time, you can always sliced it directly instead followed what I described above. You can refer to Ms Paula Jone’s version here.

  • All ingredients mentioned above are mostly substitutable to suit your family taste buds. If you are health conscious, you can lower the usage of mayonnaise or go for low fat mayonnaise dressing. Alternatively, you can also consider replacing the bacons with chicken frank or even fresh meat slices (for steamboat) if you preferred. If you preferred fresh Western herbs, you can put in dill, basil, rosemary and etc.….Full flexibility is the key and I encouraged readers to think out of the box and made one that suits your family’s taste buds.

  • Instead of putting mozzarella cheese, you can also substitute with breakfast cheese slice. As I have run out of mozzarella cheese, I decided to place a slice of breakfast cheese and it tasted equally well.

CONCLUSION

This dish is simple though the process is a bit laborious. However, you can always cut through the potatoes if you run out of time. It is a good choice as a party “snack” (depending on your size), a side meal and some simple home gatherings. It is a comfort  food and the combination of bacon, cheese with potatoes runs well beyond your visual expectations. The taste is just superb. Try and let me know.

My Steamed Sponge Cake (Kuey Neng Ko) Is Full Of Gas。。。。 (汽水鸡蛋糕)

It was 5 am in the morning. I told myself that I must wake up early to write this post and share with readers about this extremely simple recipe. This is rather a  special post to me because it is my 200th post since I started my blog 3.5 months ago in late April 2013.

Yesterday evening, I made a traditional Chinese steamed sponge cake (鸡蛋糕)and posted in certain Facebook Group and surprisingly these 2 eggs sponge cake caught a lot of readers’ attention requesting for the recipe. In fact, I am rather happy that this Chinese steamed sponge cake turned out so well.

Those who come from a traditional Chinese family will know that this cake is a delicate cake to make. As contrast to Western cakes, this cake should have “cracks” or “smiley face”  in its top, the bigger the better. In Chinese, such cracks will signify prosperity and brings good fortunes when the cake was offered to the ancestors,

Traditionally, while making this cake, there were lots of “taboos” or “pantang larang”. Only the person who are making the cakes were allowed to enter the kitchen freely. Those who entered should not be talking anything that could possibly “resulted” in a crack less cake or  a “bald” head! And housewives are trying all sorts of ways to make the cake “laugh” as “happily” as possible. She will generally be respected, admired and pampered for her ability to make a “laughing” steamed sponge cake for offering to the ancestors.


WHY THIS CAKE?

Tracking my readership statistics, I found that during the last two weeks, quite a lot of readers were visiting one of my post The Plights of Kuey Neng KoThe Traditional Chinese Steamed Sponge Cake…. This is a post whereby I  analysed why younger Chinese generations are not fond of having this traditional Chinese Steamed Sponge Cake and  tweaked it into a cute party snack.

I also knew that as one of the big Chinese religious festivals – Hungry Ghost Festivals is approaching, a lot of people are looking for recipes to prepare this cake for religious offerings. Another possible reason is because bloggers in certain hop in group is having an “egg” events whereby bloggers are searching for eggs related recipes.

Knowing those who visited my earlier post of party snack Chinese steamed sponge cake may get disappointed as that cannot be used for ancestor offerings, therefore, I feel obliged to share a recipe that can prepare a cake for praying purposes.

WHAT IS REQUIRED?

Recipe adapted from : Xinshipu.

  • 2 large eggs (preferably at room temperature) (鸡蛋)

  • 300 grams of self raising flours – sifted (自发面粉)

  • 150 gram of fine sugar (细砂糖)

  • Sprite or 7-up or ice cream soda about 200ml (汽水)

  • 2 tablespoons of condensed milk (炼奶) or 2 teaspoons or ovallete

  • One 6” bamboo basket (竹篮) that are 4” deep or round baking tin (烤盘)

Note:

It is rather common in Malaysia and Singapore or even the original recipe uses ovallete. As I do not have ovallete with me, I have searched for ovallete substitute and I came across this blog http://www.thelittleteochew.com/2009/09/what-is-ovalette.html which have list out his/her preference of not using ovalette. I tends to concur with her that as long as the egg is adequately beaten, there is no need to have ovallete or condensed milk. My mother in law also disclosed to me that they have never used any ovallete in her many years of making this cake.


STEPS OF PREPARATION

Pre-preparation

  • Get ready a 6 inches diameter baking tin and lined it with baking paper. Ideally, use a bamboo basket and lined with cellophane plastic sheet (竹篮玻璃纸). As I do not have the bamboo basket, I used a baking tin instead. Baking tin are more difficult to steam.

  • Get ready a big pot or wok for steaming and make sure that the cover is tall enough for your cake rise. One of the reasons that this cake as in the illustration did not rise as high as desired because it was constrained by the height of my steamer.

  • Boiled the water under high heat and put the empty baking tin in the steamer to warm the baking tin.

Making the cakes

  • Crack two eggs in a big mixing bowl. Add the sugar and 2 tablespoons of condensed milks or 2 teaspoons of ovalette.

  • Beat at high speed until the eggs turns light and fluffy. (Note that as a result of adding condensed milks, you may not be able to obtain the soft peak form from egg beating).

  • Fold in the sifted flour as quickly as possible.

  • Add in the gassy drinks and, stir lightly and quickly until well mixed.

  • Transfer the batter quickly to the heated baking tin/wooden basket. Put some some sugar on top of the batter in a cross shape (this is an important step to make it crack). 在鸡蛋面糊上面上,跟着十字的形状,撒下2条直线的白糖。

  • Steamed under high heat for about 25-30 minutes or until a skewer inserted in and comes out clean. Put in additional hot water if the water dries up. Do not open the steamer cover for the first 15 minutes.

  • Once your remove the cake from the steamer, immediately remove it from the baking tin or bamboo basket. Place in a wiring rack and let it cool completely. It is important that you took out the baking tin or bamboo basket immediately to prevent water condensation around the side of the baking tin that will make the cake become soggy.

  • Cut into pieces before serving. Re-steamed the cake before serving if you find the cake hardens after two to three days.

I have purposely to decorate this cake with a red ribbon and some red colouring on top of the cake. This is the traditional way of decorating the cake before offering sessions.

Analysis On Textures of The Cake

The texture of the cake is slightly different from the traditional cake due to the addition of gassy drinks and condensed milk. It is moister and I do not even need to have some drinks after taking three to four pieces. Traditionally, as it is very light and fluffy, I tend to get choke as the cake debris will irritate my throats. Therefore, do not compare with the traditional cake texture. So far, family members preferred this newer texture than the traditional types as it is easy to eat!

CONCLUSIONS

This is a simple cake. This is a traditional cake that not many blog writers would want to write about. However, to make it to “laugh” or crack to the way that you desired, it needs delicate handlings. As a traditional old man, I respect the cake and give the cake full attention and the cake is happy to give me back a big smile… Haha.

First of all, I have to be frank that I will be a vegetarian (by religion) for a period of about 1.5 months and being the only member in the family, I am pretty easy going with my meals. Since my relatives are in my house, they can cook what they like and I usually give them the free hand so that I can concentrate on my other food posts.

However, when I have things to share, I will post here and there summarizing what I have made the last few days. As mentioned before, short recipes will be captured in Guaishushu’s Facebook Page, therefore, I will let you know the dishes published and if you are interested, you can go there for some pictorial illustration. Liking the Page (not the individual posts) will ensure that you will be briefed of all future recipes when Guaishushu issue a pictorial illustration.



Salted Turnip Omelette (菜脯蛋饼)

This is a very common Chinese household dish especially for the Hokkien and the Teochew dialects. It is basically preserved turnips (either sweet or salty) fried with eggs. When I was young, we used to have this dish with white porridge as its very tasty. Previously, this dish was considered as a commoner’s dish because eggs and preserved turnip or radish are two of the cheapest cooking ingredients. It is tasty and a slice of  egg omelette with a bowl of white rice or porridge can be a meal for the poorer families. However, time have changed, this traditional dish has become so well known that it started to appear in the restaurant menu especially Minan/Hokkien/Taiwan restaurant and Teochew porridge restaurant. Preparation is simple and you may want refer here for detail pictorial illustration.



Braised Bitter Gourd with Chinese Mustard (苦菜焖苦瓜)

This is a vegetable dish “invented” by myself many years ago. Initially, it was just bitter gourd and subsequently, as per my wife’s request, Chinese mustard was added. Both Chinese mustard and bitter gourd were very bitter and if you are a bitter taste lover, you will like it definitely. At times, I have added a can of canned button mushrooms and my kids will eat together with us. This is one way of letting them getting used to the taste of bitter gourd and Chinese mustard.

Both these vegetables were beneficial to the body as per Traditional Chinese Medicine, these are “cooling” vegetables that will help to release the “heat” on your body. For those who are not familiar with TCM, body that have too much “heat “ will have lots of symptoms that can range from loss of voice, acnes in your face, sore throat etc. and you have to have food that are “cooling” in nature to balance your Yin and Yang.

My mother in law is very particular about vegetable combination in a meal and she will casually remarked “we have some “heat” prone vegetable today and today we shall have some cooling vegetables.. So under her, her vegetable choices will take into consideration this factor plus “colour” of the vegetable (green vs. white vs. colourful), leafy vs beans….. Most of time, I “failed” her test under her supervision but I am learning from her gradually as this takes time!


Vegetarian Winter Melon Soup (素冬瓜汤)

Nothing much to say about this dish as it is just another version of winter melon soup without pork ribs. As there is no meat broth, I have use more sweet dates and add in some vegetarian bean curd sheets. My boy did not complain about no meat and my girls, who is soup fanatic, will definitely say nice especially winter melon is one of her favourites.



Banana Cake (香蕉蛋糕)

Beside the savoury dishes, my baking adventures continue. I have made a banana cake using two ripe bananas. Taste is fabulous and texture is superb (soft and moist). Uniqueness about this cake is that it is prepared using a food processor rather than the normal mixer. No creaming of butter, just mixed and blend, a batter will come out that give a delicious butter cake. Cake preparation timing is less than 20 minutes. This is a comfort food that is suitable for those who want a simple way of cake making.

Grapefruit Chiffon with Grapefruit Citrus Glaze,… Ever Try This?

First of all, the format of this post will be slightly different as I did not take images for all the steps and procedures and I will share with readers what ever images I have taken. However, the taste of the grapefruit chiffon cake with grapefruit glaze is superb. 


WHY THIS CAKE

Since I come to Singapore almost 15 years ago, this is the cheapest grapefruit that I have ever bought in Singapore. Five sweet juicy medium sized grape fruits only cost about SGD2.50. When I saw the bargain, I immediately bought it and have been in my fridge for almost one month. While I can just cut and have it as fresh fruits, I thought I might as well to use it for baking. I thought of tarts, pies, poached grapefruits and many others recipes. However, this grapefruit chiffon cake caught my attention. The recipe is from Red Grape Fruit Chiffon Cake from www.canadianliving.com.

WHAT IS NEEDED

Cake tin:     10 inches chiffon cake tin

Ingredient A – For egg yolk batter portion

  • 6 egg yolks
  • 0.5cup of granulated sugar 
  • 2.25  cups of sifted self raising flour
  • 0.5 cup of cooking oil
  • 0.5 tsp salt
  • 1 tbsp of baking powder
  • 0.75 of grapefruit juice
  • 2 tbsp of grapefruit rind

Ingredients B – For egg white beating

  • 8 egg whites
  • 1cup of granulated sugar 
  • 1 tbsp of cream of tartar

Ingredient C – For Grapefruit Glaze 

  • 100 g of melted butter
  • 25 cups of icing sugar
  • 0.5 cups of grapefruit juice
  • 2 tbsp of cream

Ingredient D – For Decoration

  • 0.5 whole fresh grapefruit cut in slices.


STEPS OF PREPARATION

  • Preheat the oven to 180 degree Celsius.
  • Get ready the 10” chiffon cake tin but do not grease the cake tin as greasing will make the cake sink when taken out from the oven.

  • In a mixing bowl, put all ingredients A together and use a mixer to beat at medium to low speed until thick and smooth which will need about 1-2 minutes only.

  • In a new mixing bowl that are clean and greaseless, put in the egg white, whisk until the soft peak form.
  • Add in cream of tartar and gradually add in the sugar (in 3 stages). Beat until firm peak form. Set aside for later use.

  • Gently fold in 1/3 of egg whites into the batter using a spatula. Mixed well and poured the remaining 2/3 of the egg whites (meringues) and mixed well. The actions have to be light and swift.
  • Poured into a 10” chiffon cake tin and bake for 40-45 minutes or until when a skewer inserted comes out clean. In the event that the top starts to turn brown, you can lower the temperature to 165 degree Celsius and continue the baking.

  • Take out from the oven, invert upside down over a wire rack and let it cool completely. Use a plastic knife to scrap the sides.

  • In  a mixing bowl, beat all ingredients until smooth . Pour on top of the chiffon cake and let it drip naturally.

  • Top it with cut slices of grapefruit or grapefruit pulp. Serve with additional cream or butter icing if desired.

CONCLUSION

This recipe yields a rather unique chiffon cake by utilizing grapefruits. One will never expect the grapefruit pulp with butter icing in an excellent glaze. Grapefruit is refreshing when served with the soft, spongy and soft chiffon. It is ideal for an afternoon tea… Try and let me know.

Vege Vege Vegetable Fritters–Indonesian’s Bakwan Sayuran

INTRODUCTION

Vegetable fritter is  rather international. Almost all international cuisines will have some form of vegetable fritters. It is a  very common food item in South East Asian countries. Be it called bakwan sayuran (Indonesia), vegetable tempura (Japan), parkosa (India) or just vegetable fritters. Packed with vegetables, it can be as healthy as you want it. You can oven baked, pan fried or deep fried. Depending on which cuisine’s vegetable fritters, the dips can also be significantly different.

WHY THIS DISH

I am having my yearly vegetarian 1-1.5 months and I am looking for some vegetarian dishes. In addition, I am preparing this dish in response to the monthly challenge organized by a Google plus food community.

This recipe is not my household recipe but an Indonesian vegetable fritter recipe obtained from Ms Karin’s blog on bakwan sayuran However, I have modified to suit my family’s taste buds.

I concurred with Ms Karin that vegetable fritter recipe has lots of flexibility especially the choice of vegetables. Ms Karin had written in Google communities that “We can make fritters out of everything. Sometimes with something as lame as cabbage and a bunch of leftover vegetables (just avoid wet ones like tomatoes)”.

WHAT IS REQUIRED

Recipes adopted from  Ms. Karin’s blog on bakwan sayuran.

  • 150 g of jicama (shredded)
  • 150 g of French beans (cut into small pieces)
  • 100 g of bean sprouts
  • 50 g of red carrots (shredded)
  • 50 g of peanuts

  • 2 tablespoons of coriander powder
  • 2 tablespoons of white pepper
  • 1 tablespoon of salts
  • 2 tablespoons of sugar
  • 125 g of rice flour
  • 125 g of wheat flour
  • 200 ml of plain water
  • 5 cups of cooking oil for frying


STEPS OF PREPARATION

  • In a big bowl, assemble all ingredients together;
  • Add in coriander powder, sugar, salt, white pepper. Stir until well mixed.
  • Add in flour (rice flour and wheat flour) and water. Stir until all the ingredients are coated with the batter.

  • In a big pan, heat the cooking oil. The oil is considered as ready when you insert a chopstick or other wooden object into the hot oil, bubbles started to emit.
  • Put few tablespoons of batter at a time and deep fried until golden brown. You will have to keep a close eye during your frying process to ensure that your batter is not too big (otherwise it will be difficult to get cooked) and your oil temperature should not be overly hot (meaning exterior to start to get burnt and inside may not be cooked). In that case, you have to turn the heat to medium or small, it make take a bit longer but once you note that the colour start to turn golden, switched to high heat for high heat and immediately take it out. This will prevent the oil from going back to the batter!
  • Drain the fritters in oil absorbing paper.

  • Let it cool and serve with your preferred dips.

VARIATIONS

There are many variations to this dish. You can add in any vegetables of your choice such as Entoki mushrooms, cauliflowers and the list is endless.

Method of cooking, beside deep frying, can also be pan fried or oven baked. Though oven baked and pan fried version will not be that crispy, it is healthier and equally delicious.

Spices used can also change to include cardamom, cumin seeds, turmeric powder if you preferred.

Dips and garnishes have lots of flexibility. For my kids, I have some mayonnaise and tomato sauces which become thousand island dressings. For adults we have like to home made chilli sauce. Original Indonesian fried fritters like to go with fresh chilli or cabit as they called it. You can also garnish with cucumber or tomato slices to negate the slight greasiness of the dish!

  • A simple and easy to do dish that is packed with vegetables and can be as healthy as you want it to be . It is a vegetarian dish suitable for all age groups.
  • A full flexibility dish that can be tailored to meet your family taste buds including types of vegetables, spices used, method of cooking dips and garnishes.

Salted Vegetable Duck Soup (咸菜鸭)– A Quick and Easy Way to Prepare This Traditional Soup Dish

INTRODUCTION

This is a soup dish that I have always craved for it。 It is rather extraordinary as not many Fujian Chinese soup dish are as sour as this dish。 However, it is a well liked dish that most Chinese households would have their own recipe for this soup and every household will claim that theirs is the best. Though it is commonly thought of a Hokkien/Teochew/Peranakan (dialects) cuisines. however, to be more precise, it  is a Fujian province soup and even in People’s Republic of China, they have recipe for this soup.

When I was young, the soup were only prepared when they were big festivals or religious prayers. The main reasons were that ducks were relatively expensive and will only be served at big festivals. In addition, during religious festivals, lots of food were cooked and it is unlikely to finish all the foods in one day, this soup which is sour was less prone of turning bad if keep for a day or two as most households do not have refrigerators in the 1960’s. Thirdly, duck is very difficult to cook, traditional way will need braising of duck until the meat are soft and tender and the flavour of the salted vegetable starts to penetrate into the duck meat. Therefore, it is cooked only occasionally.

Traditionally, the duck meat were braised for hours before it can be served. It is also a common belief that the soup be left overnight to become even tastier. However, with the introduction of new cooking equipment, the cooking time have cut short considerably. I have used one hour to cook this dish and get the same taste that my mum would have prepared for at least half a day. For this illustration, I have used pressure cooker that cut short the time considerably. However, previously, I have also use rice cooker (soup function) to cook the soup and slow cooker to boil overnight. However, the best equipment is still the usage of pressure cooker followed by rice cooker and finally slow cooker.

The most basic ingredients of this soup are ducks, salted vegetables, Chinese preserved sour plums and gingers. Ginger is a must because it will counter effect the cooling effect brought by the consumption of salted vegetables.  Chinese generally discouraged consumption of preserved vegetables as it will introduce “wind” to the body. All other ingredients are side ingredients which in my humble opinion are optional.

To make it even more sour, cooks are using tomatoes (which appeared to be an essential ingredient now), asam kulit (tamarind slices), vinegar, lemon and marinated lemon. Other more common ingredients are dried mushrooms, garlics and red carrots. There are also recipes in the internet that have  chilli, brandy as their ingredients!!!!!

For me, a good bowl of soup should be sweet (from the meat broth) and sour (not extremely sour) with a blend aroma of ginger and salted vegetables. Meat must be tender and soft.



WHAT IS REQUIRED ….

  • 500 g of salty preserved Chinese Mustard
  • 1 kg of duck meat  (about half a whole duck  and de-skinned if preferred).

  • 50 g of red carrots cut in small pieces
  • 10 small dried mushrooms soaked in water
  • 3 big whole garlics
  • 100 g of gingers (peel off the skin)
  • 100 g of tomatoes cut into big pieces
  • 2 slices of ginger
  • 3 sour plums that can easily get from Chinese provision shops.
  • 6-8 cups of water (estimation)

Note:

Only the salted vegetables, duck, gingers and sour plum are the main ingredients. All other ingredients are side ingredients which are optional and a matter of personal preferences. Volume listed here are also for reference only as it is rather hard for you to get an exact 1 kg duck.. so full flexibility here.

It is advisable that you soak the preserved vegetable first before you cook the soup. I would rather soaked the salted vegetable for a longer time to reduce the saltiness and if the final soup is not salty enough, I will add salt to the dish. I usually soak the vegetable for at least half an hour.



STEPS OF PREPARATION

  • Layer your ingredients (except tomatoes)  between salted vegetables and meat and other ingredients . Why it is not a must but I have the habits of layering the ingredients to ensure the meat were well seasoned by the ingredients)
  • Add 6-8 cups of water or about 1.5 times the height of your ingredients. Note: if you are using pressure cooker, you can use this amount of water. However, if you are using rice cooker or stove to boil the soup, you may need at least 10 cups of water until the meat get tender and soft. It is ok to start with this volume of water and if the volume of water is not enough, you can add water along the way.
  • For pressure cooker, select “meat function” and it will took approximately 25-30 minutes. After cooking, let it rest in the pot for at least 15-30 minutes as it will continue to cook. BE CAREFUL WHEN HANDLING PRESSURE COOKER.  For rice cooker, select “soup function” and if after the first cooking, the meat is still or tender, you can select another round of soup function and stop when the meat have your required tenderness.  I usually cooked this before I went to bed and the next day, every thing is perfect.
  • When done, add in the fresh tomato and close the lid and rest for another 10 minutes before serving.

CONCLUSION

  • This is a rather short post on one of the traditional Chinese soup dishes – Salted Vegetable Duck Soup. The reasons for the exact combinations of these two main ingredients are unknown. Possibly duck needs time to braise and salted vegetable can withstand long hour of braising. Ginger is a must, in my humble opinion to get rid of the meat raw smell and also have to role of preventing gas formation when consuming preserved vegetables. Sour plum is the traditional ingredient to make this soup sour though the present method have resort to the use of tomatoes, lemons, tamarind slices and etc. All other ingredients are optional and quantity can varies according to your own preferences.
  • Traditionally, the soup was cooked over charcoal stoves where you need at least 2 to 3 hours or longer to get the desire meat texture and soup flavour. However, with the pressure cooker as in this illustration, the cooking time have cut down considerably and it is easier to control the quality of the soup. Rice cooker soup function is another alternatives than can be considered.
  • While the soup is tasty and nice, excess consumption is not  recommended as this soup is consider as cooling according to Traditional Chinese Medicine. In addition, those with stomach acidity will also need to watch out the volume of consumption.
