Nonya Acar Awak (娘惹泡菜)



I have a post on Acar Timun Sarawak (Sarawak preserved cucumber) usually served together with prawn crackers during Chinese New Year… And that Acar is slightly different from the Nonya Acar Awak that I will share in this post.


The major difference is that Nonya Acar Awak can be eaten after freshly prepare as a side dish or appetizer whereas the Acar Sarawak usually need to marinate for a few days before the desired texture is developed (soft but crunchy). Beside the ingredients that were used in Acar Sarawak (cucumber and carrot), Acar Awak usually have long beans, cabbage, pineapples, cauliflowers etc.. and some even have radishes..

I am pleased with this batch of Acar which I have modified from  my Acar Timum Sarawak recipe..It is sour and sweet and very refreshing. I have prepared this as a side dish for my dinner today. I am also not worried if I can’t finish the Acar as it can be kept in fridge for at least on a week. The Acar will be  more flavourful after 1-2 days.


Preparation is not difficult except it was slightly laborious.. But most of the things can done in separate stages. Just a bit of planning is required for churning out this dish .. Every efforts is worth after you took the first bite.



Servings: 8 Adult servings


  • 300 grams of cucumber – Julienned into 1 inch long
  • 150 grams of carrots – Julienned into 1 inch long
  • 150 grams of long beans – cut into 1 cm long
  • 150 grams of pineapple – cut into small pieces
  • 150 grams of cauliflower – cut into small pieces
  • 50 grams of cabbage  – cut into small pieces

Rempah (spice mix)

  • 5 shallots
  • 6 cloves of garlic
  • 4 bird eye chilli or 2 big chilli
  • 1 inch of ginger
  • 5 candlenuts (buah keras) (optional)
  • 1 tablespoon of dry prawns, soaked
  • 1.5 inches of fresh turmeric or 1 tablespoon of turmeric powder
  • 1 stalk of lemon grass (optional)
  • 1 inch of galangal (optional)


  • 1/4 cup of vegetable oils
  • 1/2 cup of white sugar
  • 1 cup of vinegar
  • 1/4 cup  of sesame seeds
  • 1/2 cup of coarsely grinded peanuts
  • Salt to taste
  • Additional sugar, salt and vinegar for blanching liquid

  • Cut the cucumber in about 1 inch long and throw away the centre of the cucumber. Dust about 1 teaspoon of salt and 1 tablespoon of sugar on the julienned cucumber. Toss until evenly coated. Put under the sun for sun dry or in the fridge to air dry for at least one hour. After one hour, you will witness lots of cucumber juices secreted. Squeeze dry the cucumber and set aside. You can either put the cucumber in a muslin cloth and squeeze or use hand to squeeze manually.

  • In a pot with some water, add about 3-4 tablespoons of vinegar, 1 tablespoon of salt, 2 tablespoons of sugar and bring to boil. Add in the cabbage, long bean, cauliflower and carrot sticks. Blanch the vegetable until soft which took me about 5 minutes. Drain and set aside.

  • In a blender, put all the rempah ingredients and some water adequate to cover the ingredients. Blend until fine.

  • In a wok, put 2-3 tablespoons of oil, put the blended spice mix, use medium heat to stir fry until the colour of the spice mix darkens and oils start to separate from the rempah. Add 1 cup of vinegar, 1/2 cup of sugar, salt to taste. Bring to boil. Once boiled, off the heat.

  • Add the pineapples, marinated cucumber, blanched vegetables followed by sesame seeds and grinded peanuts. Stir until well mixed. It can be served after it was well mixed. However, it is advisable to let it soak for at least one-two hours before serving. If time permits, soaking overnight will yield a more flavourful Acar Awak. Best served as a side dish or appetiser in a Nonya meal.



I loved this dish as it is very appetizing that will wake up my appetite. As this is a savoury recipe and there are many flexibilities. Ingredients quantity listed is a guideline. Feel free to adjust to one that suits your family’s taste bud. Remember that overnight resting is preferred though not necessary. If you cannot finish, just store in the fridge. Provided it was not contaminated with dirty spoons, it can keep up to at least a week in refrigerator since this is a recipe of preserved vegetables.

Sarawak Pickled Cucumber – Acar Timum Sarawak



Per Wikipedia,

Acar is a type of pickling made in Indonesia, Malaysia, and Singapore. It is a localised version of the Mughlai Achaar. The South East Asian variations are usually made from different vegetables such as yard long beans, carrots and cabbage which are pickled in vinegar and dried chillies. The vegetables are then tossed in ground peanuts.Variations of Malaysian Acar include Acar Awak or Nyonya Acar and Malay Acar. Acar Awak is more elaborate, containing additional vegetables such as eggplants as well as aromatic spices in the pickling mix. Acar is commonly served as a condiment to be eaten with a main course. In Indonesia, Acar is commonly made from small chunks of cucumber, carrot, shallot and occasionally pineapple, and marinated in a sweet and sour solution of sugar and vinegar.Some households add lemongrass or ginger to spice it up.”


Sarawak Acar Timun or pickled cucumber is very different from West Malaysia’s Acar Awak or Nonya Acar..If as per Wikipedia’s definition, Sarawak Acar should belong to Malay Acar..


Sarawakian don’t usually eat Acar that was freshly prepared. It was preserved in vinegar and sugar for days, weeks or even months before it was served. As such, the pickles are sweet and sour and full of turmeric and other spices flavour. The julienning of the cucumber are much thinner and longer than Nonya Acar and they usually do not have cabbages. The julienned carrot is usually used for purposes of adding colour to the Acar.


Another distinction of Sarawak Acar is that it was eaten with keropok or fish crackers…We do not eat Acar with rice… For Sarawakian Chinese families, Acar and fish crackers are the must haves during Chinese New Year…. The keropok was usually served next to the Acar together with many other sweet cookies.. Is it not something rather unusual to serve savoury dishes together with cookies? I do not know the answer either but it is definitely very appetizing after eating too many sweet cakes and cookies.


As usual, for many Sarawakian traditional cuisines, there are not many recipes in the internet. I really have a hard time of finding one be it in Bahasa Malaysia or English. I can only find one slightly more detail recipe that I used it as a basis of my Acar preparation.


I am generally satisfactory with the Acar that have been prepared especially the taste. However, the colour of the Acar looked much lighter than what I used to eat. I have no idea what went wrong and I believed it may be due to the use of candlenuts or buah keras in the recipe (original recipe used macadamia nuts). In my next attempt, I will not use buah keras  since buah keras is not something very common in Sarawak traditional cooking. However, for the recipe, I will list it as an optional ingredient.



Recipe adapted from: Acar Timun (Spicy Pickled Cucumber)

Servings: Prepare one small jar of Acar


  • 500 grams of cucumber (I have used Japanese cucumber)
  • 200 grams of carrots
  • 3 shallots*
  • 5 cloves of garlic*
  • 4 bird eye chilli or 2 big chilli* 
  • 1/2 inches of ginger*
  • 5 candlenuts (buah keras)* – optional
  • 2 tablespoons of dry prawns, soaked
  • 1/2 tablespoon of turmeric powder
  • 1/2 tablespoon of chilli powder – optional
  • 1/4 cup of vegetable oil
  • 1/4 cup of white sugar
  • 1/4 cup of vinegar
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of salt




  • Julienne the cucumber into about 3mm x 3mm x 8cm matchstick size. Do the same for the carrot.  For the cucumber, cut away the centre seeded part . Sprinkle the cut cucumber and carrots with salt and toss until well mixed. Let it marinate for at least 1-4 hours. In this process, you will witness osmosis happen and juices will be secreted leaving some soft but crunchy cucumber and carrots. Before adding to the spice, these water need to be drained out by squeezing the cucumber. If prefer, you can also dry it under the sun for 1 day before preparing the Acar.

  • Cut the chilli into long stripes about the same size as the cucumber and set aside.


  • Put all the ingredients marked with “*” into a blender. Add a small amount of water and blend until fine.

  • In a wok or frying pan, add the oil, transfer the blended spices to the oil and sauté the spices under medium heat until fragrant and oils have separated.


  • Add the cut chilli,  Acar (remember to squeeze all the juices out until as dry as possible) and stir fry for about 1-2 minutes until well mixed. Add sugar and sesame seeds. Stir fry until well mixed. Transfer to a sterilized container, add adequate vinegar to cover the vegetables.  close the lids only when the Acar is completely cooled. Served after resting for 1-2 days.


  • The above procedures have slightly stir fry the cucumber to make it slightly soft. But the stir frying shall not be too long so that the cucumber maintain its crunchiness.  Another alternative is not stir frying the vegetable. Once the rempah or mixed spice is done, add sugar and vinegar. Let it cooled completely before adding the marinated cucumber and carrots. Topped with sesame seeds. I will try out this method in my next attempt.

  • If you are looking at Nonya Acar, I will issue another separate post. But you can use the above spices as a basis but with the following differences: (1) Cut thicker and shorter: (2) no need to marinate with salt, if you wish, just marinate for less than 1/2 hour; (3) Stir fry it lightly and add vinegar and sugar to taste. (4) Serve immediately. (5) Can add cabbages and long beans but it must be blanched in hot water first.



It is very likely that I will be preparing the Acar at a date nearer to the Chinese New Year. Should I have any better recipes or method, I will update the blog and shared with all.
